Making Searcys Cocktails At Home

Our Searcys Champagne Bar may be closed for now however that doesn't mean you can't bring a little touch of Searcys to your home cocktails. It's true, we're living in weird times where we're all having to adapt to life at home, hopefully this will help... 

Searcys London head bartender and expert mixologist, Alessio Aufiero shows us how to make some super refreshing and tasty cocktails from home. Happy cocktail making!

Rabbit 555

A classic Searcys London cocktail for the whiskey lover! Made with Dead Rabbit Whiskey, Rabbit 555 is a twist on the traditional Old Fashioned.


  • 5ml vanilla syrup
  • 5 dashes orange bitter
  • 50ml Dead Rabbit Whiskey

The Classic Negroni

With just three simple equal part ingredients and steeped in just over a hundred years of history, the Negroni has got to be one of our favourite cocktails.


  • 25ml Gin
  • 25ml Campari
  • 25ml Vermouth
  • Orange slice
  • Ice

Pink Lady

Here, Alessio shows us how to make a vodka based Pink Lady.


  • 25ml Homemade Red radish lemonade syrup
  • 20ml Homemade Pineapple liquor
  • 20ml Vodka Top Ginger and Mandarin Tonic

The Mad Tea

Taking inspiration from Alice In Wonderland, The Mad Tea is a Hendricks Gin based cocktail. Although there's a few homemade ingredients, it all makes for a delicious and imaginative aperitif.

  • 40ml Hendricks Gin
  • 10ml Homemade rosé liqueur
  • 10ml Pistachio liqueur
  • 25ml Lemon juice
  • 20ml Rosé and pomegranate tea syrup
  • 20ml Green tea reduction
  • 25ml Pineapple, blackberry & basil

The No Wastage Martini 

A little more complex than the Negroni yet no less a tasty cocktail. The No Wastage Martini is Alessio's twist on the traditional Martini, here he has reused some leftover ingredients from his fridge such as Champagne and olives.


  • 60ml Gin
  • 10ml Dry Vermouth
  • 10ml Champagne reduction infused with roasted olives
  • 3 dashes of basil oil
  • Lemon zest

In this video Alessio has blended the basil with normal olive oil. 


The Favola is one of Alessio's signatures, a cocktail that is very close to his heart. It's a super refreshing mix and an easy to make cocktail inspired by Italy's beautiful Amalfi coast.


  • 35ml Staibano gin
  • 15ml Italicus
  • 10ml pallini limoncello
  • 25ml fresh lemon
  • 20ml sugar

The Godfather 

Here Alessio walks us through The Godfather, a cocktail made up of two equal parts Whisky and Amaretto. Don't forget the rocks and wedge of orange!


  • 25ml Whisky
  • 25ml Amaretto
  • Ice
  • Orange peel
