National Baking Week rolled into town with huge cake installation at St Pancras International

Visitors to St Pancras International had a sweet surpirse last week as a giant cake mapping out the London Underground system in tasty treats was unveiled within the Arcade.

Face of National Baking Week and BBC Great British Bake Off Finalist Ruth Clemens revealed the cake in a ceremony which launched a wider schedule of cooking events.

The cake, which measured a whopping 2m by 2m, featured a number of well known Underground stations renamed with a baking twist. St Pancras International featured as St Pancake alongside Bethnal Cream, Puddington, Swiss Roll Cottage, Victoria Sponge and Wimbledon Parkin.

Harry Beck’s iconic tube map was recreated with the use of intersecting coloured sweets, chewing gum pieces and licorice laces laid over a large iced sponge cake base. London’s favourite landmarks featured between stops in appropriate baked goods with favourites including Big Bun, Marble Cake Arch, St Paul's Cupcake and Trafalgar Flapjack Square.
